With the release of iOS 5.0, Apple has apparently decided to take it jailbreak very seriously. Jailbreak iOS 5.0

For the Dev Team, Apple could prevent the downgrade iOS firmware to a previous version which is a clear fight against the jailbreaking. For now, the jailbreak iOS 5.0 devices can not permanently, that is to say, it is mandatory to use a computer to force the start of the unit. The Dev Team has obviously more than one trick up his sleeve, but it will not publish anything until the release of IOS 5.0 for the general public.
